Plutôt que de faire un moelleux traditionnel, j'ai décidé de me lancer vers un gâteau plus complexe du genre de ceux que l'on peut trouver dans une pâtisserie. J'ai donc choisi de faire un succès aux noisettes, histoire de travailler la dacquoise ainsi que la crème mousseline.<br />
Cette recette est une fois de plus extraite du hors série spécial desserts du magasine <i>Saveurs </i>sorti l'an dernier.<br />

Ingrédients :<br />

Pour deux disques de dacquoise de 22cm :<br />
<br />
- 40 g de poudre d'amande<br />
- 60 g de poudre de noisette<br />
- 6 blancs d’œufs<br />
- 2 bonnes poignées de noisettes décortiquées<br />
- 150 g de sucre<br />
<br />
Pour la crème mousseline :<br />
<br />
- 50 g de sucre<br />
- 25 cl de lait<br />
- 10 g de maïzena<br />
- 2 jaunes d’œufs<br />
- 180 g de pralinoise (Poulain pour moi)<br />
- 200 g de beurre pommade<br />

Préparation :<br />
<br />
Pour la dacquoise :<br />
<br />
Mélangez les poudres d'amande et de noisette.<br />
A l'aide d'un batteur, montez les blancs en neige ferme en ajoutant le sucre peu à peu.<br />
Incorporez délicatement les poudres à la meringue.<br />
Versez la préparation dans deux cercles beurrés de 22 cm, parsemez de noisettes et enfournez pendant 30 minutes à 180°C.<br />

Pour la crème mousseline :<br />
<br />
Portez le lait à ébullition.<br />
Dans un récipient, fouettez les jaunes d'oeufs avec le sucre et ajoutez la maïzena. Versez la moitié du lait chaud, remuez bien, versez le tout dans la casserole et remettez là sur le feu. Faites cuire pendant environ 2 mn pour que la crème épaississe. Sortez là du feu dès qu'elle commence à faire des grosses bulles.<br />
Incorporez alors le chocolat haché grossièrement et remuez bien pour obtenir une crème lisse. Posez un film étirable au contact et laissez la crème refroidir à température ambiante.<br />
Pendant ce temps-là travaillez le beurre de façon à obtenir un beurre pommade. Incorporez le à la crème.<br />
Une fois la crème prête, remplissez une poche à douille et faites des boules sur un premier disque de dacquoise. Remettez le 2ème disque par dessus et laissez le gâteau au frigo au moins 2h avant de le déguster.<br />

Parce qu'on ne peut pas manger que des gâteaux, je vous propose ce soir une recette salée. J'aime tout particulièrement les tartes salées, c'est rapide à faire, on peut les accommoder comme on le souhaite et c'est très bon réchauffé donc pratique à amener au boulot pour manger à midi.<br />

Ingrédients pour 8 parts :<br />

- 4 blancs de poireaux<br />
- 15 cl de <strike>lait </strike>crème fraîche<br />
- 250 g de brie<br />
- 1 bonne poignée de pignons de pin<br />
- 1 c. à soupe d'huile d'olive<br />
- 1 c. à c. de sucre cassonade<br />

Émincez les blancs de poireaux . Faites les revenir 15 mn dans une sauteuse avec l'huile d'olive et le sucre.<br />
Pendant ce temps-là, battez les œufs avec la crème fraîche, salez et poivrez. Préchauffez le four à 180°C et faites cuire la pâte à blanc une dizaine de minutes.<br />
Sortez la pâte et versez dessus les poireaux ainsi que la préparation à la crème. Ajoutez les lamelles de brie ainsi que les pignons et enfournez une quarantaine de minutes. <br />

C'est une recette très rapide (10 mn seulement pour la préparation) et il ne faut que des ingrédients basiques que l'on a souvent déjà dans ses placards, à savoir, oeufs, chocolat, sucre, beurre et farine.<br />

Préparation :<br />

Faites fondre le beurre jusqu'à obtenir du beurre noisette.<br />
Mélangez à l'aise d'un fouet les blancs d’œuf, la poudre d'amande, la farine (toutes deux préalablement tamisées) ainsi que le sucre glace. Une fois que le mélange est homogène ajoutez le beurre noisette ainsi que le zeste de citron.<br />
Versez la préparation dans un moule à financiers, ajoutez les framboises et enfournez une trentaine de minutes à 170°C.<br />
Une fois sortis du four, laissez les refroidir et saupoudrez les de sucre glace.<br />

Préparation :<br />

Mélangez farine, cacao, sucre, amandes et levure puis ajoutez le beurre, le lait et l’œuf.<br />
Une fois le pâte homogène, ajoutez le chocolat préalablement fondu ainsi que les noisettes et une bonne pincée de fleur de sel.<br />
A l'aide d'un moule à muffins, remplissez les empreintes jusqu'à la moitié, ajoutez une cuillère à café de Nutella, recouvrez du reste de pâte et parsemez avec le reste de noisettes et la fleur de sel.<br />
Enfournez à 180°C 25 mn environ.<br />

Je ne sais pas si vous êtes comme moi mais rien de tel que l'odeur de la banane, du rhum ou encore de la cannelle et de la noisette pour m'imaginer en vacances! Ce cake contient que des bons produits (bananes, oeufs et farine bio) et n'a que très peu de sucre et de beurre alors pourquoi s'en priver?<br />

Préparation :<br />
<br />
Faites préchauffer le four à 180°C. Pendant ce temps-là faites fondre le beurre et laissez le refroidir.<br />
Écrasez les bananes à l'aide d'une fourchette et mélangez les au rhum. Ajoutez les œufs l'un après l'autre en mélangeant bien entre les deux.<br />
Ajoutez la farine tamisée, la levure ainsi que la cannelle, la poudre de noisette, le sucre, et enfin, le beurre fondu.<br />
Concassez les noix de pécan, incorporez les dans la pâte et versez celle-ci dans un moule à cake préalablement beurré pendant environ 45 mn.<br />
Il ne vous reste plus alors qu'à le sortir du four et le plus dur... attendre qu'il refroidisse afin de le déguster ! Deux recettes en deux semaines, je vous gâte ! Non j'avoue, j'ai un peu plus de temps libre donc j'en profite pour vous faire partager mes dernières recettes !<br />
Pour la St Valentin, j'ai cuisiné un filet mignon à l'orange et gingembre et comme il me restait de la marmelade d'orange, je cherchais une recette à faire avec ! Moi qui suis passionnée par tout ce qui touche à la Grande Bretagne, je n'ai pas hésité à tester, lorsque j'ai découvert son existence, la recette du cake à la marmelade d'orange! Cette recette provient du site internet du magasine de Jamie Oliver disponible depuis quelques mois en français.<br />
Comme je ne savais pas du tout ce que ça allait donner j'ai suivi la recette à la lettre à part que j'ai mis moins de sucre. Je pense que le gâteau doit aussi être très bon avec un glaçage au chocolat au lieu de celui à l'orange. A vos fourneaux !<br />

Préparation :<br />

Mélangez le beurre et le sucre jusqu'à avoir une crème homogène. Ajoutez 3 cuillères à soupe de marmelade puis les oeufs battus. Versez la farine et la levure tamisées, la poudre d'amande, le sel ainsi que le zeste et le jus des deux oranges.<br />
Mettre la pâte dans un moule préalablement beurré et enfournez 50 mn à 180°C.<br />
Sortez le gâteau du four et placez le sur une grille.<br />
Faites chauffer à feu doux le reste de marmelade avec un peu d'eau. Badigeonnez le gâteau avec cette préparation et laissez le refroidir.<br />

Faites cuire à blanc la pâte brisée pendant 10 mn à 180°C afin qu'elle reste croustillante. Baissez ensuite le four à 160°C.<br />
Faites revenir le poulet coupé en dés avec une échalote ainsi que le paprika.<br />
Dans une autre poêle, faites revenir les champignons avec la deuxième échalote.<br />
Préparez l'appareil à quiche en mélangeant tous les ingrédients.<br />
Disposez au fond de la tarte les cubes de poulet ainsi que les champignons.<br />
Ajoutez la ciboulette ciselée et versez l'appareil à quiche.<br />
Enfournez 40 mn à 160°C.<br />

- a few drop of vanilla extract<br />

Mix butter, sugar, eggs and vanilla extract in a bowl and flour, yeast and chopped M&Ms in an other one. Mix everything together and pour the batter in muffin tins.<br />

Cela faisait un moment que j'avais envie de tester la recette du kouglof, j'ai donc profité que ma collègue du nord me prête son moule en porcelaine authentique pour la tester. Vu la chaleur qu'il fait actuellement dans le sud-ouest, le kouglof a tellement monté que j'ai dû le mettre tout en bas du four car il ne rentrait pas dedans ! J'ai utilisé la recette de numéro hors série du magasine Saveurs dont je vous ai déjà parlé mais j'ai dû ajuster les proportions, notamment pour la farine, car j'avais une pâte beaucoup trop collante, bien loin de ce que je souhaitais.<br />

Pour la finition :<br />

- 3 c. à s. de sirop d'orgeat<br />
- 3 c. à s. d'eau<br />
- 1 c. à c. de fleur d'oranger<br />
- 10 g de beurre fondu<br />
- sucre glace<br />

Préparation :<br />

Faire tiédir le lait. Ajoutez le à la levure émiettée. Dans un récipient, faites un puits avec le farine, versez la levure au milieu et mélangez la peu à peu à la farine. Ajoutez ensuite le sucre et le sel. Incorporez les œufs un à un et travaillez la pâte jusqu'à qu'elle ne colle plus. Ajoutez le beurre mou, pétrissez la pâte jusqu'à qu'elle soit lisse. Incorporez les raisins et couvrez la pâte avec un torchon propre. Laissez lever la pâte une heure.<br />
Faites sortir l'air contenu dans la pâte avec la paume de votre main et mettez la pâte deux au frigo.<br />
Beurrez le moule, faites une boule avec la pâte, faites un trou et formez une couronne. Ajoutez des amandes dans les rainures du moule, y mettre la pâte laissez encore lever une heure.<br />
Cuire une heure environ à 180°C.<br />
Une fois refroidi, badigeonnez le du sirop (sirop d'orgeat, eau et fleur d'oranger), de beurre fondu et saupoudrez de sucre glace. Dégustez aussitôt.<br />

I have been wanting to make my own kouglof for a while now so when my colleague asked me if you wanted to use her authentic baking tin I could not say no. I was afraid my dough didn't rise enough but it was all the opposite. It was so big I could not put it in the oven! It had the same taste as at the baker's shop so I was quite proud about it.<br />

Ingredients:<br />

- 500g flour<br />
- 10 cl milk<br />
- 1 teaspoon salt<br />
- 40 g sugar<br />
- 10 g fresh baker's yeast<br />
- 4 eggs<br />
- 150 g soft butter<br />
- 100 g golden raisins<br />
- a few almonds<br />
<br />
- 3 dessert spoons orgeat syrup<br />
- 3 dessert spoons water<br />
- 1 teaspoon orange blossom<br />
- 10 g melt butter<br />
- icing sugar<br />

Directions:<br />

Warm up milk. Add it to fresk baker's yeast. In a bowl, dig a well with flour, pour yeast into the hole and mix it with flour. Add salt and sugar. Blend in one egg after the other and knead the dough until it doesn't stick to your fingers any longer. Add soft butter and knead the dough until it becomes homogeneous. Pour golden raisins, cover the dough with a clean dishcloth and let it rise for about an hour.<br />
With the palm of your hand, press the dough so as to have the air goes out and put it in the fridge for two hours. Butter the baking tin, shape a ring with the dough and put it in the mould.<br />
Let the dough rise for about an hour and bake it at 180°C for one hour.<br />
When it is cold, glaze it with syrup and melted butter and sprinkle icing sugar.<br />

Directions:<br />
<br />
Crumble palet biscuits and put them in little glasses.<br />
Make the cream; mix single cream, mascarpone cheese, sugar and vanilla beans.<br />
Pour a spoon of cream in the glass, strawberries previously cut into slices and cream again.<br />
You can add almond flakes on the top of the trifle.<br />

- 100 g de pépites de chocolat (un peu plus pour les gourmands!)<br />
- 130 g d'abricots secs<br />
- 100 g de sucre<br />
- 120 g de beurre mou<br />
- 2 œufs<br />
- 1 sachet de levure chimique<br />

Préparation:<br />

Mélangez la farine et la levure. Coupez les abricots secs et enrobez les de farine.<br />
Dans un autre récipient, mélangez le beurre et le sucre et ajoutez les œufs l'un après l'autre.<br />
Versez le mélange de farine, incorporez les abricots et les pépites de chocolat, et enfin, mélangez sans trop remuer la pâte.<br />
Versez dans un moule beurré et fariné et enfournez 10 mn à 210°C puis 35 mn à 160°C.<br />

Pendant ce temps-là, mélangez les ingrédients secs. Versez-y le chocolat et le beurre fondus et ajoutez les jaunes d’œuf et le lait.<br />
Montez les blancs en neige avec une pincée de sel. Incorporez les délicatement à votre préparation, ajoutez les cerises et versez la pâte dans un moule à cake préalablement beurré.<br />
Enfournez pendant environ 40 mn à 180°C.<br />
Laissez le cake refroidir avant de le démouler.<br />

Meanwhile, mix dry ingredients. Pour melted chocolate and butter, add egg yolks and milk.<br />
Whip egg-whites to a light mousse with a pinch of salt. Add them to your mix as well as cherries. Pour the batter in the baking tin and bake it at 180°C for about 40 minutes.<br />

J'espère que comme moi vous avez (enfin) passé un bon dimanche sous le soleil. Fête des mères oblige, j'avais décidé de faire un gâteau pour ma maman et celle-ci aimant beaucoup le citron, j'ai choisi de me lancer dans la confection d'une tarte au citron meringuée. La préparation est un peu longue mais ça vaut le coup, ma mère m'a dit que ma tarte était aussi bonne que chez le boulanger et quel plaisir de savoir qu'elle est 100% maison avec plein de bons ingrédients !<br />

Pour la pâte :<br />

- 1 sachet de sucre vanillé<br />
- 1 oeuf bio<br />
- 1 pincée de sel<br />
- 125g de bon beurre<br />

Pour le lemon curd :<br />

- 3 citrons non traités<br />
- 200 g de sucre<br />
- 2 c. à s. de maïzena<br />
- 2 jaunes d'oeuf<br />
- 20 cl de crème fraiche épaisse<br />

Pour la meringue :<br />

- 150 g de sucre glace<br />
- 3 blancs d'oeuf<br />

Préparation :<br />

Pour la pâte, mélangez la farine, le sel, le sucre vanillé. Ajoutez le beurre pommade, malaxez bien la pâte et ajoutez l’œuf. Formez une boule et mettez là au frigo une trentaine de minutes.<br />
Étalez ensuite la pâte et foncez un moule préalablement beurré. Enfournez 10 minutes à 200°C.<br />
Pendant ce temps-là, préparez la crème au citron. Râpez un citron, pressez trois citrons et ajoutez les autres ingrédients. Versez cette préparation sur la pâte refroidie et laissez cuire 35 minutes à 180°C. Laissez refroidir.<br />
Préparez la meringue ; montez les blancs en neige avec le sucre glace. Versez la préparation dans une poche à douille, décorez le gâteau et passez un coup de chalumeau sur la meringue. Réservez le gâteau au frigo jusqu'au moment de le servir.<br />

Hi ! I hope that you had a great and sunny sunday like me. As it was mother's day today, I have decided to cook one of my mum's favourite treats, a lemon meringue pie. It takes a lot of time to cook such a recipe but my mum told me it was as good as at the baker's shop. Moreover, it is 100% home made and full of good ingredients.<br />
As for the recipe, I couldn't make my mind so I used two different recipes. - 2 egg yolks<br />

For the crust, mix flour, salt and vanilla-flavoured sugar. Add soft butter and egg, knead pastry.<br />
Shape a ball and put it in the frige for about 30 minutes.<br />
Spread pastry, line the baking tin (previously buttered). Bake 10 minutes at 200°C. Let it cool down.<br />
Meanwhile, grate one lemon and press it with two other ones. Add the other ingredients. Pour the lemon curd on the pastry. Bake it for about 35 minutes at 180°C. Let it cool down.<br />
Prepare the meringue. Whip up egg whites with icing sugar. Pour it in a pastry bag and decorate the cake. Use a blowtorch for the meringue topping. Keep the cake in the fridge until eating it.<br />

Moi qui n'avais pas encore succombé à la mode des chaussons a totalement craqué pour toutes ces recettes originales. Pour une première, je vous propose la recette de chaussons au poulet au curry. Le chausson est délicatement parfumé et les différentes saveurs s'accordent parfaitement.<br />

Ingrédients pour 4 chaussons :<br />

- une pâte brisé bio<br />
- 200 g de blanc de poulet<br />
- un oignon<br />
- 10 cl de lait de coco<br />
- 1,5 c. à c. de curry<br />
- 120 de patate douce<br />
- 40 g raisins blonds<br />
- le jus d'un demi citron vert<br />
- 1 oeuf<br />
- 1. c.à s. de lait<br />

Préparation :<br />

Coupez la patate douce en dès. Faites la cuire 5 mn dans de l'eau bouillante avec du sel. Egouttez et réservez. Coupez le poulet en cube ainsi que l'oignon. Faites revenir l'oignon avec un peu d'huile, ajoutez le poulet et laissez le dorer un peu. Ajoutez ensuite, le curry, la patate douce, le lait de coco, les raisins, le jus de citron. Salez, poivrez et laissez cuire 10 mn. Pendant que la préparation refroidit, préparez votre pâte à chausson. Découpez quatre disques de taille égale. Farcissez les de la préparation, refermez les et badigeonnez le d'un oeuf et de lait. Enfournez pendant une trentaine de minutes à 190°C.<br />

Today, I have decided to try something new and cook you a dish taken from the last book I've bought, Mes p'tits chaussons, written by Marjolaine Daguerre and published by Toquades. This book, written by one of my high school classmate, is full of delicious recipes. Even if I did not know anything about this trend before, I am now fond of these pastries which can be stuffed with various and original ingredients. As for my first recipe, I have tried out the chicken curry pies whose flavours go perfectly well together.<br />

- 200g chicken breast<br />
- 1 onion<br />
- 10 cl coconut milk<br />
- 1,5 teaspoon curry powder<br />

Directions:<br />

Cut sweet potato into cubes. Cook them in bowling water for 5 minutes with salt. Dry them and set them aside. Cut chicken and onion. Brown onion with olive oil, add chicken. Let them stew for a few minutes and add curry, sweet potato, coconut milk, raisins, lime juice, salt and pepper. Let everything cook for about 10 minutes. Let the stuffing cool down while cutting 4 same size discs. Stuff pies and glaze them with egg and milk. Ingrédients pour 16 rochers :<br />

- 2 blancs d'oeuf à température ambiante<br />
- 100 g de sucre<br />
- 130 g de noix de coco râpée<br />
- 1 c. à c. de beurre fondu<br />

Préparation :<br />

Mélangez au fouet électrique le beurre fondu et les blancs d'oeuf sans les monter en neige ferme. Ajoutez le sucre ainsi que la noix de coco. Préchauffez le four à 175°C. Pendant ce temps-là, formez des petites boules, façonnez les comme vous le souhaitez et déposez les sur une plaque de cuisson. Enfournez les environ 20 minutes. Laissez refroidir avant de les décoller de la plaque.<br />

Hi ! As I don't really have free time for myself these days, I have decided to cook you a very simple recipe which also makes it possible to use white eggs. Indeed, there is a great number of recipes in which you only use egg yolk so you don't know what to do with the white eggs left. I have used a recipe from <a href="http://www.marmiton.org/recettes/recette_congolais-ultra-simple_36635.aspx" target="_blank">Marmiton website</a> and reduced the amount of sugar. I have also added more grated coconut to the recipe.<br />

Ingredients for 16 rochers:<br />

Il faut dire que l'on est très chanceux ; le magret de canard, le foie gras, la garbure, l'axoa, etc, font partie des plats traditionnels. Ceci sans compter toutes les merveilleuses pâtisseries que nous avons comme le russe, les macarons de chez Adam, les muxu, le gâteau basque et bien sûr le cannelé ! J'aime tout particulièrement l'alliance de cette croûte caramélisée et de l'intérieur tellement moelleux.<br />
Pour faire mes cannelés, j'ai choisi comme recette celle du site <a href="http://www.marmiton.org/recettes/recette_canneles-bordelais_11439.aspx" target="_blank">Marmiton</a>. Même si je ne possède pas les moules en cuivre nécessaires pour avoir une belle croûte, je ne m'en suis pas si mal sortie que ça. Mes cannelés sont croustillants à l'extérieur et moelleux à l'intérieur et ont un goût délicat de rhum.<br />

Dans une casserole, faites bouillir le lait avec le beurre et la gousse de vanille. </div>

Pendant ce temps-là, mélangez le sucre, la farine, le sel, et ajoutez les oeufs d'un seul coup. Versez le lait chaud et remuez jusqu'à que le pâte soit parfaitement lisse. Ajoutez le rhum. Laissez refroidir et mettez la préparation au réfrigérateur pendant une nuit.</div>

Préchauffez votre four à 250°C. Enfournez les cannelés et laissez les cuire 15 mn puis baissez le thermostat à 180°C et laissez encore cuire pendant cinquante minutes. Bien laissez refroidir avant de les démouler.</div>

Le soleil ne souhaitant pas montrer le bout de son nez, j'ai pris les devants en vous cuisinant un cake au citron et aux myrtilles. Je ne sais pas vous mais moi lorsque je mange ce genre de gâteau, je m'imagine dehors à prendre le soleil. J'ai pris comme recette celle du site <a href="http://www.marmiton.org/recettes/recette_cake-au-citron_11391.aspx">Marmiton</a>. J'ai simplement réduit un peu la quantité de sucre, ajouté des myrtilles fraîches et préféré faire un glaçage au lieu du sirop que l'auteur préconisait.<br />

- 175 g de sucre<br />
- 4 œufs bio<br />
- 1/2 paquet de levure chimique<br />
- 100 g de beurre<br />
- 1 citron râpé <br />
- 250 g de myrtilles fraîches<br />

Séparez les blancs des jaunes. Montez les blancs en neige avec 25 g de sucre. Réservez. Mélangez les jaunes et le sucre. Ajoutez le zeste de citron ainsi que la farine et la levure préalablement mélangées aux myrtilles. Versez le beurre fondu, mélangez bien, et enfin, ajoutez délicatement les blancs en neige. Beurrez le moule, versez la pâte à gâteau et enfournez pendant une quarantaine de minutes à 180°C.<br />

Pour le glaçage : <br />
<br />
Mélangez 50 g de sucre glace, une cuillère à café de d'eau chaude et quelques gouttes de citron. Badigeonnez le gâteau et laissez sécher. <br />

Separate four eggs ; keep the whites and discard the yolks. Beat eggwhites until stiff with 25g sugar. Set aside. Mix egg yolks with the sugar left. Add zest of lemon as well as flour, yeast and blueberries. Pour melted butter and add eggwhites carefully. Coat the mould with butter, pour the mix and bake it at 180°C for about 40 minutes.<br />

To make frosting : mix 50 g sugar with one teaspoon hot water and a few drops of lemon juice. Spread on top of cake.<br />

Je l'ai fait deux fois de suite et l'ai pourtant dégusté avec le même plaisir. Ma famille m'a dit que le gâteau avait un goût de Pim's, mais si vous savez ces délicieuses petites génoises anglaises avec une gelée de fruit et un glaçage au chocolat ! Ici point de gelée aux fruits, c'est le gâteau qui est imbibé de sirop de clémentines ce qui donne quelque chose de très parfumé et de très moelleux. Il est ensuite glacé avec une ganache au chocolat et au miel. Vous avez peut-être aperçu ce gâteau à la une du dernier magasine <i>Régal </i>mais si ce n'est pas le cas, voici sa recette :<br />

Ingrédients pour un moule de 24 cm :<br />

- 100 g de farine<br />
- 200 g de beurre demi-sel<br />
- 350 g de sucre en poudre<br />
- 280 g d'amande en poudre<br />

- 1 citron<br />
- 5 oeufs moyens<br />

Pour le glaçage au chocolat :<br />

- 150 g de chocolat noir<br />
- 90 g de beurre<br />
- 2 c. à c. de miel<br />

Préparation :<br />

Nettoyez et séchez les clémentines ainsi que le citron.<br />
Râpez leur zeste. Ajoutez le beurre mou ainsi que 250 g de sucre. Fouettez jusqu'à avoir un mélange lisse. Incorporez les amandes, les oeufs ainsi que la farine.<br />
Beurrez et farinez un moule, versez-y la préparation et enfournez la pendant 50 mn à 170°C.<br />
Pendant que le gâteau cuit, préparez le jus.<br />
Récupérez le jus du citron ainsi que des clémentines et faites le bouillir dans une casserole avec le reste de sucre (100g). <br />
Quand le gâteau est sorti du four, versez-y dessus le sirop et laissez le refroidir complètement avant de le démouler.<br />
Pour préparer le glaçage, faites fondre le chocolat, le miel ainsi que le beurre à la casserole. Nappez le moelleux et laissez sécher.<br />

First of all, I want you to know that this sponge cake is a delight! I cooked it two times in a row and I still had the same pleasure while eating it. My family told me that it tasted like Pim's. I am sure you know these British little sponge cakes which are covered with fruit jelly and chocolate ganache. As far as my recipe is concerned, there is no fruit jelly but the cake is dipped in clementine juice which gives something very scented and spongy. It is then iced with a honey and chocolate ganache. You may have seen this recipe in the last issue of French magasine Régal but if it is not case, here is the recipe:<br />

Ingredients for a 24 cm mould:<br />
<br />
- 100 g flour<br />
- 200 g slightly-salted butter<br />
- 350 g sugar<br />
- 280 g ground almond<br />
- 4 clementines<br />
- 1 lemon<br />
- 5 eggs<br />
<br />
For the chocolate frosting:<br />
<br />
- 150 g dark chocolate<br />
- 90 g butter<br />
- 2 teaspoons of honey<br />
<br />
<br />
Directions:<br />
<br />
Clean and dry the 4 clementines and lemon.<br />
Collect their zest. Add soft butter and 250 g of sugar. Whisk so as to get a smooth cream.<br />
Add ground almond, eggs and flour.<br />
Coat the mould with flour and butter. Pour the mix in the mould and bake it for 50 minutes at 170 degrees C.<br />
While the cake is baking, make the juice.<br />

A la sortie du four, ajoutez les pommes coupées en rondelle. Saupoudrez de morceaux de daims. Enfournez pendant pendant une vingtaine de minutes. <br />

Pour 8 petits gaufres :<br />

- 200 g farine bio<br />
- 90 g beurre<br />
- 8 cl de lait bio<br />
- 1 oeuf bio<br />
- 75 g sucre perlé<br />
- 12 g de levure boulangère fraîche<br />
- 1 sachet de sucre vanillé<br />

Préparation :<br />

Délayer la levure dans du lait tiède. Réservez.<br />
Dans un saladier, mélangez farine, oeuf, sucre vanillé et sel. Ajoutez le mélange lait/levure.<br />
Pétrissez la pâte et laissez-là gonfler près d'une source de chaleur (un radiateur par exemple) pendant une trentaine de minutes.<br />
Incorporez le beurre mou et le sucre perlé.<br />
Faites cuire les gaufres à l'aide d'un gaufrier pendant environ 3 minutes.<br />

Knead the dough and let it rise in a warm place (next to a radiator for example) for about 30 minutes.<br />
Add soft butter and coarse sugar.<br />
Cook the waffle with a waffle maker for about 3 minutes.<br />

Préparation :<br />

Pour la pâte à la vanille :<br />

Tamisez la farine, ajoutez le beurre mou ainsi que tous les autres ingrédients. Mélangez.<br />
Étalez la pâte entre deux feuilles de cuisson de façon à obtenir un carré de 20 cm x 20 cm.<br />
<br />
Pour la pâte au chocolat :<br />
<br />
Procédez de la même façon que pour la pâte à la vanille.<br />
<br />
A l'aide d'un pinceau, badigeonnez la pâte à la vanille avec le blanc d'oeuf. Superposez-y la pâte au chocolat, roulez le tout et mettez le boudin dans le frigo pendant au moins une heure.<br />
<br />
Découpez ensuite des rondelles d'1 cm d'épaisseur, disposez les sur la plaque de votre four recouverte de papier cuisson. Enfournez les sablés pendant une vingtaine de minutes à 160°C.<br />

Sift the flour, add the soft butter as well as all the other ingredients. Stir everything together.<br />
Spread the batter between two baking sheets so as to end up with a 20 x 20 cm square.<br />

For the chocolate mix:<br />

Proceed in the same way as for the vanilla mix.<br />
<br />
With the help of a brush, apply the white egg on the vanilla batter. Place the chocolate mix on the top of the vanilla one, roll everything up and put the batter in the frigde for an hour at least.<br />

Preheat the oven to 160°C.<br />
<br />
Cut slices of about one centimetre each, place them on a baking sheet and in the oven for about 20 minutes.<br />

Mix together the oat flakes with the dried fruits and nuts.<br />
Pour the honey and mix all the ingredients together.<br />
Fill the mould and put the bars into the freezer for a few hours.<br />
When the bars are hard enough, you can put them on a plate and cover them with melted chocolate.<br />
Put them into the fridge before eating them. <br />

The granola bars can be kept for a week in the fridge and for several weeks in the freezer.<br />
